Equipped with state-of-the-art machinery, our setups ensure efficient production processes. Paneer Processing Plant: Paneer, a staple in traditional cuisine, is produced by curdling milk with acid, making it extensively consumed. The paneer market has witnessed significant growth at a CAGR of 12.5%. Paneer Manufacturing Process Steps by 3i Tech:
  1. Milk Selection: We source high-quality milk, preferably from buffalo, due to its higher solid content, resulting in superior paneer quality.
  2. Milk Warming: The milk is gently heated over medium heat in a heavy-bottomed pot or pan to ensure gradual heating and prevent burns.
  3. Acidification: Once the milk reaches the optimal temperature (around 85–90°C or 185–194°F), it is mixed with an acidic component like vinegar, lemon juice, or citric acid. This initiates curdling, separating the whey from the curds.
  4. Curd Formation: The hot milk, combined with the acid, causes the milk proteins to coagulate, forming curds. This process typically takes a few minutes.
  5. Draining and Pressing: The formed curds are delicately drained using cheesecloth or a fine-mesh strainer to separate them from the whey. The curds are then pressed into molds or wrapped in cheesecloth to expel excess whey and shape them into slabs or blocks.
  6. Setting and Cooling: After pressing, the paneer blocks are removed from the molds and allowed to cool either at room temperature or in refrigeration. Cooling helps the paneer set and achieve the desired firmness.
  7. Cutting and Packaging: Once cooled and set, the paneer is sliced or cubed to the desired size. These paneer pieces are then packaged for consumption or sale.
At 3i Tech, we ensure a meticulous and efficient paneer manufacturing process, resulting in high-quality and delicious Indian soft cheese for your enjoyment. Cheese Processing Plant: Cheese, derived from milk and available in various flavors, caters to diverse tastes and is widely used in fast food products. The cheese market has experienced substantial growth at a CAGR of 26%. Steps for Cheese Making Process at 3i Tech:
  1. Milk Selection: We choose high-quality milk, preferably from cows or buffaloes, depending on the cheese variety being produced.
  2. Standardization: The milk undergoes standardization to achieve the desired fat content and composition for cheese making.
  3. Pasteurization: The milk is pasteurized to eliminate harmful bacteria and ensure food safety.
  4. Coagulation: Controlled synthesis of rennet milk coagulum is initiated to form curds, which are essential for cheese production.
  5. Curd Treatment: The curds are cut, stirred, and heated to expel moisture and develop the desired texture.
  6. Moulding: The curds are then moulded into the desired shape, depending on the type of cheese being produced.
  7. Ripening and Storage: The cheese is aged and ripened under controlled conditions to enhance flavor and texture.
  8. Packaging: Once the cheese has reached optimal ripeness, it is packaged for distribution and consumption.
